The recipe I picked out this time, was mainly due to the fact that I needed to make a trip to the grocery store, and I was too lazy to go! I just so happened to have all of the ingredients on hand to make this recipe, without having to step one foot out of the house. HECK YEAH….my kind of recipe!
Speaking of my laziness. My dear hubby was nice enough to run to the grocery store to pick up a few things I needed to make ANOTHER recipe from this book. I will share that one with ya later.
I am not the only who gets on a roll when getting a new cookbook, am I? I am telling ya, I think I drooled my way through her entire cookbook. I have always enjoyed her recipes from her website, but I finally broke down and picked up this phenomenal book. So glad I did. THUMBS UP, so far 🙂
Ok, back to the recipe.
One of the meals I thought I would miss the most when I began my plant-based journey, was the good ole’ comfort Mac & Cheese. Honestly, cheese was THE only animal product I had issues giving up at first. I believe it took me around four months to say adios to that bad boy.

I did not have the specific pasta on hand that the recipe calls for, so I just used my corn pasta shells, and added broccoli. Totally delicious! I also sautéed the onion and garlic with water, instead of oil.
