For those of you that do not know, THURSDAY is my dear husband’s night to cook.

You wifey’s out there know EXACTLY what I am talking about!
I LOVE THURSDAY’S!! (who wouldn’t…right??)
FYI…it is Friday Eve…technically
THIS Friday Eve, my hubby decided it was a good night for CHILI.
It is October, and here in Illinois, the leaves are turning, and it is getting down right “chili” outside (pun intended).
Any of you PBJ’s out there love Chili as much as we do? If so, then I am down right POSITIVE you will DIG this recipe he created tonight.
Ok, don’t flip out…but you might be a tad bit confused when you see one of the ingredients in the recipe.

I am not sure about you, but I have NEVER had pineapple in my chili.
O to the M to the G!! You HAVE to put pineapple in your chili. It is AMAZING!
Frank mentioned that he was going to throw together a chili recipe, and was curious what it would taste like using pineapple. I told him I had a can of crushed pineapple tidbits in the pantry. He then started finding everything we had around the house that could go into this masterpiece dish.
No trip to the store was necessary tonight. All of the ingredients in this recipe, we had around the house.
Again, this chili was made in our Instant Pot. Not necessary, but sooooo much faster. You can easily make this in a large pot on the stove, or in a crock pot. CLICK HERE if you want to learn more about the Instant Pot (my favorite kitchen gadget).
Frank named this recipe “Kind Chili”, because it is free of ALL animal products. Frank used to make chili “back in the day”, and it would be LOADED with meat.
Now, he knows he can enjoy a good, hearty, delicious, “meaty” chili…minus the “meat”.
This chili is loaded with everything our bodies need: protein, iron, calcium, potassium, etc… Most importantly, it is a compassionate, comforting meal, on a chili Fall night!
Why not give it a try? The animals will thank you for it…and so will we
