My name is Laura, and I am married to the most wonderful man in the world, Frank. We are enjoying our new life to the fullest. I decided to start this blog to respond to the many various questions I receive about my lifestyle. Examples:
“What do you eat? Don’t you worry about getting enough protein and calcium? How does one start this lifestyle? You do not eat any meat/dairy at all…no fish, no chicken, no CHEESE?? I thought olive oil and milk were good for you?”

I began my plant-based lifestyle September 25, 2011 after watching the very informative documentary Forks Over Knives. I just happened to be bored and flipping through videos on Netflix and stumbled across this one. I am so thankful I watched it, as it has literally changed/saved my life. This lifestyle emphasizes vegetables, leafy greens, fruits, beans/legumes, whole grains, nuts/seeds (in some cases). These foods are good sources of protein, carbohydrates, fat, vitamins, and minerals.
I will be honest in the fact that my husband did not watch the video with me at first and was very adamant about eating meat and animal products and not at all supportive of me. He continued to eat his meals and I had to learn to cook mine. Keep in mind; I ate fast food every day, normally at least twice a day, so I had to teach myself to cook. My husband always did the cooking before, which usually consisted of steak or chicken. It was about two months later; he finally decided to watch the video on his own. At that point, he understood why I made the changes that I did. He decided to give it a try as well and the results were very exciting. He has lost almost 80 lbs and is off his blood pressure medicine and his psoriatic arthritis is almost healed. Always consult with your doctor before making any major changes, especially if you are on any type of medication. If you find that your doctor is not supportive of your lifestyle, then I would continue to look until you find one that is.
After watching the video, I honestly did not know where to begin or what to do next, so I just jumped on the computer and started searching Google for any and everything plant-based. I fortunately came across a book by Julieanna Hever, A Complete Idiot’s Guide to Plant-Based Nutrition. I consider this my bible to a plant-based lifestyle. There are many great books and resources to read and I will discuss those in future blogs.
I hear a lot of people say that eating this way is expensive. The first several months after starting our new lifestyle, we had a single person income and believe me, we did not have a lot of money, and we found plenty of recipes to make. If you want this bad enough, you will get rid of the “excuses” and DO IT. Again, I did it for health reasons, not necessarily to lose weight, and my focus was and always will be of my deceased father who passed away of congestive heart failure. I do not want to end up like my dad, and I was definitely headed there eating the foods I did previously. Find your incentive and this will be an easier and happier journey. I will also post helpful tips to “save money” and make items from scratch instead of buying them from the store.
Also, if you begin this lifestyle, I recommend making an appointment with the doctor for a “checkup”. It will be interesting to see your progress of your Cholesterol levels, triglycerides, blood pressure, etc… Also, I would take a before picture of yourself, because you will want to see your transformation and it is definitely something that will inspire others later. I wish I would have taken a before and after because I have lost nearly 40 lbs from what I weighed in 2008 when I got married. I recently took a picture of my brand new bikini;that I would have never bought before, because I was too embarrassed to wear. I have tons of energy and have never felt better in my life. There are so many health benefits to this lifestyle. It truly brings meaning to “Let food be thy medicine”.
